Beetroot Lentil Burgers {yes they qualify as a whole-food-plant-based food! }

Our FAVORITE Beetroot Lentil Burgers

These burgers are perfect. Enough said. They meet all criteria in our lives right now, so we needed to share them with you.

They have Beets, Legumes, Turmeric, Ginger and are a whole-food, no added oil, or salt, and therefore we love love love them.

Gwen has been on a kick lately of wanting to eat REALLY CLEAN.. this is basically how we eat always, but we occasionally have a Clif Bar, some vegan ice cream, vegan packaged cheese, etc.. and he is all about cleaning this up and making it more rare than it is right now.

So I have been thinking of yummy things to make that fit into this, the thing is he is tricky! He doesn't like it when I make stuff that doesn't taste REALLY GOOD.. even if I think a particular dinner is super tasty, it does not even matter if he doesn't think so because I like making things that make him happy too! 

So here is is, the burgers that are basically 5 ingredients, from our garden and really good and healthy!

 

INGREDIENTS:

(this makes 10-15 burgers so you can freeze the extra)

  • 4 cups shredded raw Beetroot (ours was from our garden, win!)
  • 4 cups cooked Lentils (does not matter what kind (we used brown, drained)
  • 1 cup or 1 can Chickpeas, cooked & drained
  • 1/4 cup Nutritional Yeast
  • 1 small onion, diced
  • 2 Tablespoons Cumin powder
  • 2 cloves garlic, minced (or 1-2 tablespoons)
  • 1 - 3 tablespoons Braggs Liquid Aminos (or soy sauce) OPTIONAL
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Ginger power
  • Optional : 1/2 cup oat flour or flour of choice (it helps them hold together but is not necessary)

DIRECTIONS:

There is not many ways to screw this up, so don't worry if yours is not perfect.

  1. Preheat oven to 410F
  2. Basically you mix everything together in a big mixing bowl until well combined
  3. Line a few baking sheets with parchment paper
  4. form the burgers in your hands to the shape and sizes you want, try to make them as tightly compacted and pressed together as possible
    1. We made a combination of big burgers and small burger balls/bites
  5. place them on the parchment paper leaving some space between each one
  6. bake 30 minutes or so on that side then remove them from the over and flip each one, then bake them on the other side for about 25-40 minutes.
    1. Each oven is so different it is really hard to say how long to bake them. All the ingredients are ok to eat raw so really the baking times is just personal preference.
    2. If you like them really firm and crunchy, cook longer
    3. We are lazy and impatient so we took them out as soon as possible!
  7. Allow to cool 15 minutes before attempting to eat with some OIL FREE BAKED FRIES!
  8. Just bake slices potatoes on parchment paper on really high heat and they will get all crispy and delicious without oil! Flip half-way and cook more and they are amazing!
