Chocolate Chip Cookie Bars {Gluten-Free, Sugar-Free, Fruit-Sweetened, Oil-Free}

The best & Healthiest Cookie Bar I have ever had!!

For some reason running and summer time makes me want a few things in particular, chocolate chip cookies and lots of banana nice cream. Yesterday I started with the cookie thing and finished the day off with some ice cream.

The thing about cookies is they are usually crap and definitely do not promote health or help us as runners.

I wanted something kinda dense like a regular one, but the issue is that oil and lots of sugar are the things that makes cookies dense and crunchy.. And oil and refined sugar are bad for us…

So I sought out to find a way to make something that would satisfy all these requirements:

  • Chocolate chip cookie like
  • dense moist
  • healthy
  • oil-free
  • sugar free
  • yummy
  • easy & quick
  • plant-based

I recently have become really fond of using Almond Meal and Almond Flour as a flour, and I found that by combining them with Oat flour you get the best of all worlds.. Whole-food-plant-based foods that combine nuts and whole-grains. win-win!

Let me tell you, Gwen ate half the tray straight out of the oven yesterday after his second run of the day, and he did not feel like crap after eating them. They left him feeling great.. The truth is these cookie bars are full of goodness.. and a few chocolate chips!

Dry Ingredients:

puffed millet
  • 1 cup Almond meal (we use Barney’s)
  • 1 cup Almond Flour / Coconut Flour or whatever healthy flour you want to use
  • 1 cup Oat Flour
  • 1 Tablespoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 2 Cups Millet Puffs (we use Natures-Path-Organics) (if you cannot find these you can use any puffed cereal, or 1 more cup flour)

Wet Ingredients:

  • 3 Bananas - large ripe ones (if you really want you can use 1 cup apple sauce here)
  • ½  cup non-dairy milk of choice
  • 5 Dates - Medjool, large, pitted
  • 2 Tablespoons ground Flaxseeds
  • 1 Teaspoon organic vanilla extract

Toppings:

  • 1/2 cup mini dark chocolate chips (vegan)

Directions:

  • In a large mixing bowl mix all the dry ingredients
  • In a blender, blend the hell out of it all until smooth and dates are blended into a thick creamy milkshake like consistency (if you want just go ahead and drink this and forget about the cookie bars…) 
  • Preheat oven to 350 and make sure there is a wrack in the middle of the oven for the baking dish to sit on.
  • Line a 9x12 inch baking dish with parchment paper or lightly spray with coconut oil cooking spray
  • Pour this milkshake over your dry ingredients and mix with a wooden spoon until well mixed.
  • Scoop the cookie dough into the prepared dish and try to flatten the top and even out as much as you can
  • Now sprinkle the chocolate chips over the top, or arrange perfectly which is fun also. Sometimes i like to make all the chocolate chips facing up and cute.
  • Bake for 25 minutes, remove from oven and allow to cool.
  • Cut into squares and enjoy!
