Healthy Italian Cheese Recipe {Light, Dairy-Free, Lactose-Free, Oil-Free}

All runners love pizza, pasta and Italian food.. that is just a given.

So now the thing to figure out next is how to make this staple in our diet as healthy and as beneficial to our running as possible?

Let's face it, traditional dairy cheese sure does taste good, but it does NOT make us feel at our best. Feel heavy and sleepy after pizza or stuffed shells? Let me tell you, it there is another way! Once we discovered the amazing lightness of this healthy Italian cheese, we became obsessed with eating it on everything!

Pizza, pasta, crackers, salads.. there is no limit because it tastes so good and makes us feel amazing. No lactose, no dairy, no oil, only healthy whole-foods from plants in this cheese!

Here is the thing, cashews are so good for us, tofu is so good for us (even for men, everything you heard about soy being bad, is seriously a myth), herbs are so good for us, and this cheese is just health promoting overall. You will love it!

Here is the recipe video, and below is the written recipe!

Recipe:

  • 1/2 cup raw cashews
  • 1 block firm or extra firm tofu
  • 3/4 cup non-dairy milk ( unsweetened)
  • 1/2 cup Nutritional Yeast
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 2-3 tablespoons basil, fresh or dry
  • 2 tablespoons dried oregano
  • dash or salt and pepper (to taste)

DIRECTIONS:

  1. Blend everything (except the tofu) until creamy.
  2. Drain the tofu and add 1/2 of the block directly to the blender with the cheese mixture
  3. Place the remaining 1/2 block in a medium sized mixing bowl and crumble with hands in that bowl.
  4. Pulse and blend the tofu with the cheese mixture until mostly creamy
  5. Pour blender contents into the bowl with the crumbled tofu and mix with a wooden spoon.
  6. Add a little more salt to taste. Unfortunately the thing that makes cheese taste so dang good is the salt, so just make it taste good!

There you have it, the best, healthiest multi-purpose Healthy Italian cheese!!!
