If you guys watch our VLOGs you know we LOVE PANCAKE DAY!

Usually pancake day is either on a day off from running, or on the morning before a long adventure run. 

Many of you guys have been asking us for a good pancake recipe, so in this post I am going to share with you guys my favorite ones!

Topped with Banana Nice Cream

These are the ones we make most always, because they are easy and we love how they turn out PINK!


  • 1 cup rolled oats blended into flour
  • 1 tablespoon baking powder
  • ½ cup almond/non dairy milk
  • 1 banana
  • 1 tablespoon apple cider vinegar
  • About 3 tablespoons of cooked beet (a few slices or ¼ cup-isa) or 1 tbs beet powder (optional)
  • 1 tablespoon chia seeds (optional)
    • (Makes about 4 pancakes 3-4 inches in diameter)


  1. Using your Blender, blend the oats into flour, pour into a bowl and mix in the baking powder. Now blend the banana, beet, apple cider vinegar and non-dairy milk together until smooth, creamy and bright pink!
  2. Keeping that mixture in the blender, slowly blend in the flour/baking powder mix. You will probably have to use your tamper to mix this up because it gets really thick, but you may need to add a little more milk if it is too thick.  Once the flour is mixed in we usually turn the blender to high speed for about 5 seconds then turn it off. You do not want to overmix the batter.
  3. Now pour this all into a working container (we use a big measuring cup) and hand mix in the chia seeds with a spatula. Let stand for 4-5 minutes, and it will get super puffy.
  4. You need the blender free to make banana nice cream!
  5. Heat a large nonstick skillet over medium heat.
  6. Time to check the batter. If it is still ultra fluffy and full of air bubbles, it is necessary to add a splash of non-dairy milk and stir it to settle these bubbles. Once it’s settled you're ready to go!
  7. Pour desired amount of batter onto warmed skillet (about 1/3 cup).  Allow to cook until small bubbles form all over pancake (about 3-5 minutes). Flip and cook until both sides are golden brown-pink. Sometimes it is fun to make little mini pancake stacks!
  8. If you have a partner in crime to help you, get them to make the nice cream or prepare the toppings while you are making the pancakes. If solo, you can always pop the cooked pancakes in the oven on warm to keep them from getting cold while you prepare the toppings.
  9. Now it is the time you have been waiting for. Chow down time! For best results eat with lots of banana nice cream as the topping :) Allow your stomach to digest this 30 minutes before hitting the trails!

SKILLET TIP ***If using a good quality pan that you know does not stick, you should not need any cooking spray. However if your pan is known for sticking,  you may need to spray coconut oil cooking spray on the pan and then wipe it mostly clean with a paper towel. This allows the pan to be just slightly oiled but not too much. You should not have to do this again after the first time.

This meal is our favorite thing to eat on recovery days when we have time to relax in the morning and make a fun breakfast! I love this breakfast on these days because it incorporates the incredible power of beets along with my favorite foods like pancakes and nice cream. The banana and oats in there make up a wonderful base for this pancake so it is healthy all the way through! We discovered that by adding the chia seeds to the batter right before we cook them that it makes the pancakes have this awesome little crunch! I love all things crunchy, so I am very proud that I found a way to incorporate crunch into a pancake and nice cream meal! If you do not like this twist, just leave them out and the recipe still works great.
