FIRST, YouTube PLUG - I just started my Plant-Positive Pod Series of short random un-edited videos on youtube, so check those out if they sound fun...

As this whole veggie smoothie becomes more of a routine in our life, more and more of you guys are seeing us chug these things down on our Instagram stories and so many people are wondering how we make them, and how they could fit into their lives.

Most people like V8, so that is a starting point, because honestly these veggies smoothies are like a home-made, healthier version of V8 that you can adapt to your taste buds and budget!

We got the idea from Dr. Greger of NutritionFacts.org when he posted an amazing recipe video on his YouTube channel, of him making and prepping a weeks with of these epic veggie smoothies.

A light-bulb went off in our head when we saw it, and we knew it was something we could get on board with!

Not only that, but we are convinced that Michael Greger is the King of Nutrition and anything that he does and believes in we immediately follow suit! hahhaa.. can you relate? Do you guys do this too? If so please let us know!!! :)

Any who. So we started to make them just like he did, and then we noticed that some of the ingredients are kinda expensive and/or go off quickly or are just not available in high-quality fresh, so we started to experiment with frozen vegetables.

Frozen Veggies + Frozen Fruit .. are, contrary to what many think, super healthy, nutritious and often even more fresh than Fresh Produce! How is this? Well because often times they freeze this stuff the day it is picked, or they freeze all the really ripe, bruised or blemished stuff while they are sorting through it, meaning that it made it into the freezer (and preserved its nutrition) well before it could have ever made it to the supermarket in the produce section.

Frozen Veggies/Fruit does NOT have added salt and crap like canned veggies do, which is one thing you have to look out for if/when buying canned veggies/beans, check the ingredients and try to get the low sodium / salt-free options whenever you can.

Basically, frozen veggies are ok in our book, and if you can afford organic frozen - even better!

So here is our current recipe that we have derived from the original that you can watch in Dr. Gregers video, we have options for most all ingredients so you can choose what works best for you.

Like all our recipes, don't worry if you cannot find that exact thing in the form we use, if we use tomato paste but you can only find tomato sauce or diced tomatoes, just buy what you can find (try to get the stuff without added salt) and use it until you can find a tomato paste without crap added.

Money Saver $ TIP:

We buy our tomato paste in a huge tin can, like gallon sized! We were buying the tiny little ones, which were like .60 cents - $1 each, then we upgraded to the 15oz can, which was a slightly better deal, $1.2 - $1.8 per can, then we finally found these huge cans for only about $4!!!

We then transfer the entire contents into small plastic/glass tuperwares and freeze them. That way we can pull one out, put it in the fridge and use that small amount, because if we kept the entire thing in the fridge it would go bad. This way we just take out a weeks worth at a time and it saves us lots of $!

The idea is to work towards something that improves your health, not to have perfection right away!

INGREDIENTS for 2 Large Smoothies:

  • 2-4 Sticks Celery (fresh)
  • 2 Carrots (fresh)
  • 1 Apple or Orange (fresh)
  • 1 cup Broccoli or Cauliflower (frozen, or fresh)
  • 1/2 cup Bell Peppers (frozen or 1/2 fresh)
  • 5 huge handfuls Dark Leafy Greens (Kale, Spinach, Chard, etc, we buy fresh bags and freeze them immediately to use in all smoothies, this insures they never go bad!)
  • 1/4 - 1/2 cup Lemon Juice (it is expensive so if you want to use less that is ok but make sure you have citrus of some kind in it [orange/lemon/lime] so you can absorb the calcium in the greens)
  • 1/4 cup Tomato paste (or 1/2 can diced tomatoes / 1/4 cup tomato sauce with no salt/sugar)
  • 1 tbs Beet powder (or 1/4 cup fresh beets, 1 small beet)
  • 1/3 cup ground Flaxseeds
  • 1/8 tsp ground Ginger powder
  • 1/8 tsp ground Turmeric powder
  • 1/8 tsp ground Mustard powder
  • 1/18 tsp ground Black pepper
  • Optional - a few slices of Spicy pepper of choice to make it hot & Spicy
  • 2-3 cups Water (use some ice too if you are going to drink it immediately)

- Add more water if needed to make it smooth and at a consistency that you like!

Pour into 2 large mason jars and store it in the fridge until you drink it. They store in the fridge well for 2-3 days so if you want to prep-ahead of time go for it!
