You guys, this bread blows my mind, the flavor is out of this world. I am not sure what it is about it, it is a very creamy, vanilla, oat... mild sweet and nutty taste that I cannot pin point..SO FLIPPEN GOOD! Gwen keeps telling me that it is his all time favorite thing I have ever made..

I think it is close. And the secret ingredients... NuttZo, Zucchini, Oats, Dates, Bananas, Almond Milk and that is it.. simple, healthy clean ingredients that everyone can enjoy.

I think we have got a serious obsession with NuttZo right now, and I am pretty sure its not going away any-time soon.. and that is fine with me! This stuff is just so freaking good, the ingredients, the quality, the taste.. there is nothing like it!!

I use my time away from running (due to my injury and slowly getting back into running) to experiment in the kitchen. I love baking and cooking and it seems to be one of the only things that I can do BESIDES BEING OUTSIDE RUNNING/ADVENTURING that takes my mind off everything.. totally peace.. :)

Here is the Recipe for you lovelies!

RECIPE!!!

DRY INGREDIENTS:

  • 2 cups oat flour
  • 1 cup rolled oats
  • 1.5 tablespoons aluminum free baking powder
  • 1 teaspoon baking soda
  • 1 medium-large zucchini, shredded

WET INGREDIENTS:

  • 2 Bananas, ripe
  • 8 dates, pitted, chopped
  • 1.5 cups Almond Milk
  • 2 teaspoons organic vanilla extract
  • 3 tablespoons ground flax seeds

FINAL INGREDIENTS:

  • 4 NuttZo 2Go Packs (Power Fuel is what we used to make it peanut-free, but they are all amazing)(or 4-5 tablespoons)
  • 3 dates, pitted and chopped (optional but really good)

SIMPLE DIRECTIONS:

Zucchini NuttZo Bread Vegan Gluten Free uncooked
  • mix the dry ingredients together in a large mixing bowl
  • pre-heat oven to 350F
  • get a loaf pan and line with with parchment paper or lightly spray with coconut-oil cooking spray
  • BLEND all of the wet ingredients together until smooth and milkshake like 
  • Pour the wet ingredients/ Milkshake thingy into your dry ingredients and stir until combined.
  • Squeeze in 3 Nuttzo 2Go Packs ( try to squeeze it in all over the place so you can "marble" it in) and lightly swirl it through with a wooden spoon
  • Pour into the prepared pan
  • Top with 1 -2 more Nuttzo 2Go Packet, squeezing it out in a fun way!!
  • Bake at 350 for 20-45 minutes (depending on your oven and if you want it cooked all the way through) 
  • Gwen insists on gooey bread, so we baked it for 30 minutes and it was not fully cooked.. perfect!
  • THATS IT!! 

We love to eat a slice with a glass of almond milk... or break it up into chunks and eat it in a bowl of almond milk.. or with a banana.. or alone.. or with more NuttZo on it...
